why do they call them Scotch eggs? I dunno. First time eating or making.
Hard boiled eggs, wrapped in Italian hot sausage, dipped in flour, rolled in egg wash and Panko breadcrumbs. Baked until golden. Turned out well enough to warrant a second try, next time with a little red pepper in the flour. Filling too.

Anyone ever tried breakfast burritos? They are such a good breakfast. Mary, when my children were young, they would ask me to make a mess, which is what I called the stuff we would roll up in a large tortilla. Diced potatoes cooked in olive oil until gold, throw in a couple of cloves of garlic, crumbled bacon or sausage then crack some eggs over the top and mix until the eggs are cooked. Grill the tortillas, cover one side with shredded cheese, top with diced onion, tomatoes and cilantro, put the potato egg stuff on and roll the tortilla up. Great breakfast.
